Ugly Organic Vegetable

We have belonged to a CSA for many years. We are very fortunate because our CSA has established a reciprocal buying arrangement with a number of other farms, which allows them to provide a farm share option year round.  We pick up our weekly bounty of fresh, organic fruits, vegetables and eggs at our local drop off location (which happens to be our neighbor/friend’s home). There is a sense of adventure that comes along with picking up our weekly share.

We never know what will appear in our box from week to week.

This week we were greeted by a rather scary looking vegetable. I am trying so hard to see the beauty in this “thing”, but it’s really ugly and creepy looking.

Thankfully I was able to go on the CSA website to figure out what it was and whether it was edible. Before knowing its given name I gave it my own: Medusa (pretty self explanatory).

Do you know what it is?

Give it your best shot and then I’ll post the answer.

I also need some suggestions what to do with it.

Update on the Ugly Organic Vegetable


Thanks to everyone who participated in the guessing game-and there were some fantastic guesses! Three of you got it right! If you guessed this interesting and ugly vegetable was celeriac aka celery root you would have been correct!

A bit of celeriac info:

  • Celeriac is a root vegetable and is cousin to anise, carrots, parsley and parsnips
  • Celeriac can be a perfect non-starch substitute for potatoes

I might try THIS recipe for french-fried celeriac (baking the fries instead of deep frying).  Thanks for all the great cooking and salad suggestions!

  1. That one stumped me for a while, but I finally figured it out! So I won’t guess, that would be cheating!
    It might be good peeled and then oven roasted with other vegetables?

  2. It’s celeriac or celery root! I’m pretty sure you have to peel it, which is tricky because of all the knobby bits. It’s well worth the effort, though: celeriac is really tasty raw and cooked. I use it in slaws and I add it to parsnip for a healthier version of potato pancakes.

    You know, it’s less ugly now that I know how good it tastes! 🙂

  4. Did you google it? Glad you figured it out. I had to do a bit of leg work before finally figuring it out. Now I need more suggestions on how to eat this “thing”.

  5. I think it’s celery root or celeriac, which I think is the same thing just different name. It’s yummy!

  7. I’ve always been slightly scared of celery root’s appearance, but now that I’m taking a closer look, I think I could have fun seeing different things in its many knobs and bumps. I will definitely have to try it!

  15. Oh Lori! That is scary!!! I am freaked out just looking at it – it looks like a bunch of tangled up mice!!! BLAGH! So did you eat it? LOL

  16. It’s not pretty….still hanging out in my fridge, waiting to be eaten. I’ll have to do something with it soon. There were some great suggestions on how to prepare it.
